Understanding the enzymatic transformation that occurs when whole cultured curd is churned compared to industrial cream separation.
Industrial ghee is manufactured by separating cream from milk via high-speed centrifuges and cooking the raw fat directly. In contrast, authentic Vedic Bilona Ghee starts with culturing milk into whole curd using probiotic strains. During overnight fermentation, lactose is consumed and beneficial butyric acid is synthesized. When this curd is churned, the molecular structure of the fat is broken down into easily assimilable medium-chain triglycerides that nurture gut lining and cognitive health.
